Cannabis infused apple pie

Cannabis-infused apple pie recipe

Ingredients

For the pie crust

• 250 g all-purpose flour
• 125 g cold cannabutter
• 60 ml ice-cold water
• 1 tbsp sugar
• 1 tsp salt

For the apple filling

• 5–6 medium apples (Granny Smith or your preferred type), peeled, cored, and sliced
• 100 g sugar
• 30 g flour
• 1 tbsp lemon juice
• 1 tsp cinnamon
• ¼ tsp nutmeg
• Pinch of salt

Optional quick strudel version

• 4–5 apples, peeled and sliced
• 100 g sugar
• 1 tsp cinnamon
• 1 tsp lemon juice
• 1 tbsp cannabutter
• 1 tbsp raisins
• ½ orange (zest and juice)
• 6 sheets of filo pastry or ready-rolled puff pastry

Directions

1. Prepare the crust: In a large bowl, combine the flour, sugar, and salt. Cut in the cold cannabutter until the mixture resembles coarse crumbs. Slowly add ice-cold water, one tablespoon at a time, mixing until the dough begins to hold together. Form into a ball, wrap in cling film, and chill for at least 30 minutes.
   

   

2. Make the filling: In another bowl, mix the sliced apples with sugar, flour, lemon juice, cinnamon, nutmeg, and a pinch of salt. Stir well until the apples are evenly coated.
   
3. Assemble the pie: Preheat the oven to 180°C. Roll out half of the chilled dough on a floured surface and place it into a greased pie dish. Fill with the apple mixture, then roll out the second half of the dough to cover. Seal the edges, cut a few slits in the top crust, and brush lightly with melted cannabutter.
   
4. Bake: Bake for about 45–50 minutes, until the crust is golden brown and the filling is bubbling. If the edges brown too quickly, cover them with foil. Remove from the oven and allow to cool slightly before slicing.
   
5. Quick Strudel Option: If you prefer a lighter version, melt the cannabutter in a pan and sauté the apples, sugar, cinnamon, raisins, and orange zest for a few minutes until soft. Lay out filo (or puff) pastry sheets, spoon the filling in the centre, fold and roll into a log, and brush with cannabutter. Bake at 200°C for 20–25 minutes until crisp and golden.
   
6. Serve and enjoy: Serve warm with a scoop of ice cream or whipped cream. Start with a small slice and wait 45–90 minutes before having more, as edibles take time to take effect.
   

How to store

Leftover cannabis apple pie can be stored in an airtight container in the refrigerator for up to four days. Warm slices in the oven or microwave before serving. The strudel version can be frozen for up to three months. Just thaw and reheat when ready to enjoy.
